I have a birthday cake for a kid who loves snow boarding but.... I've carved the mountain added the buttercream and i think it just looks sloppy instead of like snow... any ideas aside from coconut??

One thing I have done is to get the buttercream as smooth as you can and then add some clear (?white) edible glitter. It's so pretty and really glistens. I'm sorry if this isn't what you're thinking - I'm just a "simpleton" when it comes to cakes and have to use what little talent I have!
If the cake is fondant covered, try powdered sugar. You can also use those tiny nonpareils.
you can thinly spread royal icing and let it dry then with a scraper shave it and mix it with edible glitter or luster dust.
I think Duff from ace of cakes airbrushed his white fondant cake with luster dust to look like snow. Maybe you could dust it on buttercream.
