I'll just post the cookie pic in my regular pics. They're a terrific cookie because you get the chewie molasses cookie inside with the crunch of the pearl sugar outside. One of my favorites.

There's a thread on here, with someone saying that their post appeared 40 times. I hope one of the mods goes in and deletes some of the extra ones. All they're doing is taking up database space.

Sure...The key to these cookies is to NOT overcook them. If they've begun to change color, you're too late. They should be just set. If you cook just right, they are moist and chewy...a minute or two too long, you've got gingersnaps.
Molasses Spice Cookies makes about 75 cookies
17 1/2 ounces Flour
5 ounces Whole Wheat Flour
3 teaspoons Cinnamon
2 teaspoons Baking Soda
2 teaspoons Ground Ginger
1/2 teaspoon Ground Allspice
1/2 teaspoon Ground Clove
1/2 teaspoon Salt
1/2 teaspoon Black Pepper (freshly ground)
1 cup Butter, softened
1/2 cup Shortening
2/3 cup Sugar
2/3 cup Brown Sugar
2 whole Egg Yolk
1 cup Dark Molasses
2 teaspoons Vanilla
2/3 cup Pearl Sugar
1. Combine first 9 ingredients and set aside.
2. Beat butter and shortening together for 30 seconds.
Add sugars and beat until combined.
Beat in yolk, molasses and vanilla.
Gradually add flour and combine well.
Cover and chill 1 hour.
3. Preheat oven to 375°.
Shape dough into 1-inch balls.
Roll balls in pearl sugar.
Bake, 2-inches apart on parchment lined sheets
for 8-10 minutes.
Cool one minute on sheet.
Transfer to rack to cool completely.
