Icing Help, Please

I have been asked to make a red velvet wedding cake 3 tiers 10,8 and 6. The rest will either be a sheet cake or cupcakes. The cake will have to travel 2 hours away for the wedding. I know cream cheese icing needs refrigerated. The couple does not want buttercream icing. What other flavor goes with red velvet cake? Plus could I use some cream cheese icing between the layers and that be all right left out? Thanks for any help.

I have heard of putting dry ice in the box with a cake, as long as there is sufficient room in the box so it doesn't touch the cake. You might have to replenish it during the drive.

I don't know the details....anyone else?

I also know there is a crusted creamcheese icing on here and that can hold up lot better. Also make sure that your car is cooled off with ac. I would feel more safer with this recipe going that distant.

If the car is cool and the cake is away from direct sunlight then I would guess it would be ok. I use the recipe at designmeacake.com and it has been fine 24 hours in room temp.
