Please Critique My Cake Making Timeline.

My son's birthday is on Saturday July 11, and I have put together a timeline of things to get done for the cake before that. Please let me know what you think of this action plan...


Tuesday July 7: Make MMF and teddy bear figure (50/50 gumpaste/MMF)
Wednesday July 8: Make buttercream and bake cakes
Thursday July 9: BC fill, BC crumbcoat and cover cake in fondant
Friday July 10: Decorate and stack (?)

If I bake the cakes on Wednesday, I was planning to wrap tightly with saran wrap and store them in the fridge until Thursday. Should I forget about the fridge and just wrap and store them in a cupboard? Will my cake stay fresh if I'm baking it on Wednesday?

Please constructively criticize my action plan. icon_cool.gif

I am in no way a pro...But my schedule would differ from yours in that:

Monday: Make MMF and Gumpaste (I've read that they work better when left to rest overnight, so that's what I do)
Tuesday: Make Teddy Bear Figure
Wednesday: Make buttercream and put in fridge, covered well
Thursday: Bake, cool, fill, and crumbcoat cakes (I try to not bake until as close to the even, as possible)
Friday: Cover and decorate

I don't put uniced cakes in the fridge. Some people recommend freezing right after baking for extra moistness. I've done this when I knew I my schedule wouldn't allow for me to bake later in the week - I just left it in the freezer until the morning I was ready to crumbcoat it. It didn't take on a freezer taste like I had worried about.
