I'm looking for a scratch or doctored cake mix recipe that can be used to make a small cake for when I want to practice. One that would bake two 4 or 6 inch rounds would be ideal.

You can use any one-layer sponge cake recipe and divide it into two small pans. I recommend "sponge" cake because it is the basic base for decorated cakes. You'll find several sponge cake recipes here
