When To Bake

I have baked almost the whole wedding cake this week. Now my freezer is filled to the max so I can't freeze the last one. Wedding is Saturday afternoon, but I have to have the cake baked and ready to travel (uniced) by Thursday afternoon. I have a room with kitchen in the wedding City Thur and Fri where I will ice and decorate.

If I bake the last tier Wed night will it still taste fresh? Should i wrap and refrigerate? It will be lemon pound cake. Thanks.

Do you have a friend close by with a freezer? I would try that first.

even if you baked wed. nite. like you said.. it will still be fine and still be fresh..jus t wrap really good..

I usually have 3 weddings and other misc. party cakes each weekend, so I start baking on Monday for the weekend. Tuesday is decorating day for the party cakes, and they are still fresh for Saturday/Sunday. Your cakes will be fine even if you started them today and wrap them well until you want to decorate them.

Yes they will be fine. Just seal it very well before refrigerating.
