Ice Cream Cake Question.

Do I need to re-freeze after I add the ice cream filling and before I ice it? I'm not the fastest "ice-er" and I don't want the ice cream to melt. Then After I decorate it, it will have o go bak into the freezer, but how will the decorations hold up to the freeze? I am going to do BC with Fondant accents.

I would freeze anywhere between 30-60 minutes after adding the ice cream filling. Crumb coat, freeze again, ice and decorate as fast as you can and then freeze again (atleast an hour after decorating) until ready to serve/deliver. It's going to take a long time to finish because you're going to have to keep freezing for long periods so the ice cream doesn't melt. Good luck and have fun icon_smile.gif
