I am making a wedding cake for a friend. Since this would be my FIRST, I am quite nervous. Her cake design choice is going to be a challenge. The picture is below. I have a few questions:

1. what is used for the tree branches? chocolate fondant? how does it adhere to the fondant cake?

2. i've never made sugar flowers. are there any recommended books out there that will help me with making these flowers?

3. i'm making this as a gift but if i were to charge, what could I charge for this cake? it needs to feed 150 pp and be 4 tiers. i was thinking 4-8-12-15.

Thank you so much for the help.

You go girl, that's ambitous! From what I've read I think modeling chocolate or gumpaste would be your best bet for the branches. Definitely gumpaste flowers, start making them way ahead. I'm doing 350 cherry blossoms for my sister's wedding cake in two weeks. My other sister and I are cutting them all with a simple blossom cutter and then hand painting them with petal dust. Check youtube for helpful videos and good luck!
