Hiya all

I Have tried 4 different recipes for rich fruit cake..so far its just not happening !!the fruit cakes i have seen all look so solid but mine have come out all raised and not that solid to be honest!! how do i get the perfect fruit cake..any suggestions are much appreciated!!

Well, I am not the connoisseur of fruit cakes, but first I would have to look at your recipes to find out why they are so fluffy.

I do remember my grandpa making his fruitcake, drizzling spiced rum over it, and wrapping it tightly with plastic wrap and storing it in the fridge for several days before he reheated it and served it warm with cinnamon whipped cream.

This is a great recipe...I have modified it a bit and skipped the peels and reduced the citron stuff (don't like 'em) and substituted some dried cherries and cranberries instead...I also use the brandy which makes a very rich cake. I have made this cake for 30 years and never had a failure...it is like a pound cake with fruits, really very good.

there is a recipe out there for freindship cake that is based with a mix. There is also a starter that you have to make like 2 weeks in advance and let it ferment. my boss makes it every year and it is great.
