When you have finished piping royal icing on your cookies do you just leave them on a cooling rack on the bench to dry overnight?

Yes! Especially if you have a lot of detail or layers. they can be dry to the touch earlier then that, but if you end up stacking them, let them dry overnight to avoid any problems.
