I made Debi's bc icing, put in some key lime juice that says put in fridge after opening, & added in some lime zest, otherwise I made her icing as normal. Do these need to be stored in fridge? I want to send some with my mom & some with my husband, hubbys work has no fridge, but my moms has a cooler, and I think I have room here to put them, or I could if I rearranged my outside fridge. BUT do they have to be? I dont wanna make anyone sick!

I am no expert but I have used RealLemon in buttercream icing and did not refrig. They have been fine for up to 2 days. Hope this helps.

I'm pretty sure it acts the same way that butter, etc. and that the amount of sugar in the product will act as a type of preservative. I would say that it is fine to leave on the counter for about the same amount of time you would normally leave any frosting out for. I know that you are probably looking for someone that actually "for sure" knows what they are talking about...but that's my 2 cents! icon_smile.gif
