The wedding cake is all dummy layers. It will be removed and the sheet cakes will be cut and served from the kitchen area. Should they be 1 layer......1 layer torted.....or 2 layers? What is the norm in this situation?

It would depend I guess...talk with your bride to see what she wants and then charge her accordingly. If I were the bride, I would want 2 layers torted but that's me...then again I wouldn't have a dummy

I don't torte my cakes, so I would do them as two full layers. In other words, they should be about 4" tall.
