hiya,

i am making an 11 inch fruit cake and i have never made a fruit cake of this size before, my question is will i need a flower nail in the centre like i use with a sponge cake or is it ok with a fruit? i have double lined the inside of the tin, will this be sufficient for an even bake? this cake is for a wedding cake so i need to get it spot on!

its a light fruit cake by the way, thanks in advance for any help you can give me!

I have never made a fruitcake, however I think the rule of thumb is anything over 10" you need a center heat. Hope that helps!

Hi there, I wouldn't use a flower nail as it contains fruits and alcohol. Double lining the tin is what you should do and you can use bake even strips or wet towels or even wet news papers around the tin.
