You'll be fine, Melvira. Definitely post a picture of how it turns out. I am just shocked you are even worried about this, I guess everyone gets a little nervous when we have to do something new that we haven't done before.

Hello, you are a forum superstar! It's just hard to believe you haven't done a topsy-turvy cake yet. I haven't, but I am relatively new and no one has asked for one yet. I'm sure it will be a learning experience for you. That is what I try to take away from every cake I do, good or bad. It all about learning new things.

Make sure that you dont cut the hole to deep. The girl on the Youtube video is better than the one in the photos. When you cut the cake too deep it looks like the top cake is sinking. And it will make your cake look shorter and fat. Something you need to remember!!

Nah, I'm kinda short, but don't let that or my silliness fool yah. I'm built like a brick sh*tter and mean as h*ll when I'm mad. My hubby is 6'2", and broad shouldered, but he says that physical confrontation with me scares the heck out of him! Hahaha. Good thing we aren't that type of couple.

Yah, yah, yah... nothing like a pushy broad to get you into the cake spirit. Hehehe. Well, I made my icing and I'm gettind ready to stack up my layers so I can freeze them. Then comes the carving. Of course, I have to clean out some space in the freezer first... that could take a while.

janelwaters that is exactly how I did my TTs and I have never had a problem with it. I used white chocolate instead of RI. Always have chocolate and all. I guess it would be better to use RI as it doesn't melt.

So far, so good guys... I have it covered in fondant, airbrushed and stacked, now I just have to add the fondant details. I probably won't finish it tonight because I've been baking and decorating since 6am. Ugh. But I did all the brownie bites, cheesecake bites, and fruit tarts, almost done with the cake. Tomorrow I have to finish up the cake and make 12 dozen cuppies. I also won't assemble the fruit tarts until tomorrow cuz I don't want them sitting and getting soggy. I am on schedule, so I am thrilled. And, like I said, the cake isn't too bad so far!
Oh come on guys... it's not going to be all that good. It's turning out ok though. I am not super angry like last time. Hehehe. I am doing the method like that video that was posted earlier where you stack it all, then cut the slant. It worked much better than the other method I tried where you torte at an angle and stuff. That just didn't work for me.
Now I need some creative advice... here is the situation...
The whole open house has an Alice in Wonderland theme. The cupcakes are going to be iced some in white, some in red, some swirled to simulate the 'painting the roses red' thing. The cake is bright spring colors per the clients request, and around the top two tiers I made ribbon roses, some white, some red. I also did some beads on white wrapped wires for a fun and funky look. Now, another idea I had was to take some images of the characters and print them as edible images, back them with fondant, then place them around the tiers for visual interest. Do you guys think that would add or detract from the cake? The bottom tier has the diamonds, middle tier has stripes, top tier is going to have polks dots I think. (Haven't done that part yet.) In my head the characters look cute, I'm just worried that they might turn out looking hokey and I don't want to cheapen it. The customer is an artist and has an eye for this stuff, yet she gave me complete creative control. Only told me spring colors, and to focus a little on the painting the roses.
Can you tell I'm tired? I'm babbling. God bless you guys for sticking in here with me.
Personally, I think it might look a little cluttered with the characters. Having said that, I think you should make a couple and see how YOU like it. You have a great eye for what looks good on a cake without overdoing it.
Could you put very small ones on the sides of the top tier inplace of the polka dots?
