I never level any of my cakes (by level I mean slicing off the crown if there is one)

When they come out of the oven, if there is a crown, I immediately tip the pan over on my stainless work table (on top of parchment) and press down to "flatten" the cake level with the pan. After about 5 minutes I remove the pan. It makes for a nice dense cake without a lot of waste.

It depends if I'm making a cake for home that I want to look nice for my portfolio, or just a cake for fun. I do level my cakes that go out, b/c my kids love to eat the "scraps."
