Whatever you do, don't poke bare stems directly into a cake. This is totally gross (they weep out the end and have nasty chemicals on them. You can wrap the stems in plastic wrap or foil. You also can dip in wax or chocolate. Then you can poke into the cake. You can get little floral tubes to stick them in. I perfer to arrange in oasis floral foam. If you don't know how to arrange, check with your florist to see if they can help.
