AWow Roxylee, that mmf looks really good! The sticky gloopy mess that I made tasted lovely and I can't stand sp.

Tiddy, I love Baileys so much! Why have I never made a Baileys cake? Anyway I agree with Mel, just dump some in, taste, repeat, dump some in, taste, repeat, etc, etc, etc! As long as you remember to take note of how much you've added when you're warm and fuzzy you should be OK!

Ooh, actually i've just had a thought, I love baileys in coffee, a coffee cake with baileys would be lush!

AHi, nanny, I was just thinking that would be the easiest, just flavour the buttercream with baileys. No cakes today nanny, one for one of my daughters classmates for Monday now. The pigs in mud cake went well, (in the end) much easier than I thought it would be.

How did your cakes go nanny? Last time I looked in you had about 37 to do in 2 days! Haven'tseen any pics tho, have i missed them?

Thanks Nanny and Maisie I just need to find something to do with it now though that shouldn't be to hard.

Nanny when I made my cake lace today it had loads of tiny bubbles in it, I let the icing rest for ten minutes then tried again and the second lot was loads better. Did you get bubbles in yours or have I done something wrong do you think? Here are the pics, the white ones are the first batch and the pink the second but I don't think you'll be able to see the bubbles properly on the pic.

some bits broke when I was getting them out of the mat.

AWhat I found was you really need to make a paddle movement back and for, then give it min or so and you will see all theres little air pockets appear, do do it again and again, if it broke when you tried to to take it off it means it isn't dry enough I think.

What Do you think of it Roxylee?

Hey Maisie, I've had a quiet few weeks, then all hell breaks loose next week and the week after, got 8 cakes, with 2 cakes in 1 day on two occasions, nuts! And 6 of them are so fiddly, well for me they are, not so much the cakes but figures etc.

AI'd love to try the mmf recipe roxy thank you! I'll send you the bc recipe, if you don't like too sweet I think you'd love it :-) it's harder to work with under SP as it's softer but I usually fill with it then do the crumb coat with ganache :-)

I used a small angled spatula on the first batch then baked it in the oven it said in the packet for 15 to 20 minutes but some were a bit sticky on the side that was touching the mat and some were cracking. I think maybe that's because some mats were deeper than others so some weren't done enough and some were over done and cracked because they were to dry. When I saw all the air bubbles I had a quick look on the internet and it said about the paddling so I used my plastic spreading knife that came with my Ikea silicone mat.The claire Bowman video on you tube says 10 to 12 minutes.I had left the icing covered in the fridge to rest and  I had turned the oven off after the first batch so just put the second lot in while it was still warm and left them in until it went cold then put them on the table to air dry for a couple of hours. They were still a bit fiddly to get out but were a lot better and loads less bubbles. I have done some more and left to air dry overnight to see how they turn out. I read something earlier where it said to do another coat of icing and it will be easier as it is a bit thicker.

AHi Tiddy, just saw your post about the baileys cake. When I make it, I replace the water/ milk or flavouring amount with Baileys and double it up. So if your recipe calls for two table spoons of milk, replace it with 4 table spoons of baileys. And when you torte your cake, drizzle some baileys on each layer and add more baileys to your butter cream.

My family seem to like the Asda one so have just stuck to that but with the tearing problem I thought I'd try the MMF and see how that goes. I tried navy blue Renshaws once and my family said it was disgusting.

I'm not keen on anything overly sweet either and buttercream is only acceptable if its a thin layer I cant abide big swirls on cupcakes makes my mouth feel horrible. And if its mound of buttercream & a lump of SP in a mouthful - god thats wrong! I see in the US many of their wedding cakes are thickily covered in buttercream - personally cant think of anything worse.  SP is ok if there is a small layer and find it works considerably well with chocolate ganache.   Usually use Renshaws and find it very palatable.  I made a real chocolate sp last year and that was stunning - expensive but worth it on a wedding cake. Sainsburys is fine for everyday but again soft. Cream cheese buttercream is ok but not that I would consider this on a plain cake works better on a coffee & walnut or carrot cake.
