So, I am a professional cake decorator and have some really awesome cake recipes. I haven't ventured very far into the cupcake world though. Box cakes are just not an option for me, so I have been trying out all of my cake recipes as cupcake recipes and they're just not working out the way I think they should.

The flavor and texture are great but they won't rise above the wrapper at all. If I fill them enough to go above the wrapper they flop. What am I doing wrong? Is there a secret out there that I'm not aware of? I had 2 theories. First was that my baking powder was bad and the second is that I was baking them at too high of a temperature. I've tried changing things a bit but still haven't turned out a really good cupcake yet.

If anyone has any great advice, PLEASE let me know. Thanks.

I just solved that problem this past week...you fill the cups only 1/2 way that way they have an opportunity to rise and crown. or 3/4 if you don't want a crown
