Lots of cookies ship well. The old standby chocolate chip ship great, snickerdoodles, that sort of thing. However, I am living on Guam right now and I made my inlaws in Florida iced sugar cookies for Valentines Day and they shipped just fine. I stacked them two high, with parchment in between and lightly vacuum sealed them, then wrapped in bubble wrap. They arrived in perfect condition and I'm told they still tasted great!
