Who Uses An Electric Commercial Oven?

So, I found a store...having the architect look at it this week. He's got to tell me about venting a gas oven, etc...

From what I understand, new code in NYC is that it has to be vented to the roof. (4 stories up) which will cost a pretty penny to do. Maybe 15-20 grand. (Shoot me now!) icon_cry.gif

so, I thought that if it came to that, I could try an electric oven...which will cost more monthly, but at least will give me
1) a chance to make sure a new store is worth it all with minimal expenses, and,
2) a chance to save up a little dough (LOL) to actually pay for the venting without getting a loan.

any input, reviews, advice?

We have an electric oven, we paid for the vent but last min I changed to the electric! It works really well and you can do saving the cost of the hood-I needed one in anycase being a restaurant. Good Luck!
