I make eclairs all the time, BUT I had a special request for a super large eclair that will serve 6 people.

I'm not sure if the pate a choux will actually do a giant sized eclair. Has anyone else tried this before? Or had any experience with using pate a choux for something larger than a regular sized eclair or cream puff?

Yes I made a huge one once in the shape of a race car track for my boy for his birthday. It was about 14 inches big--a giant doughnut shape. No worries. Pate a choux is the bomb. Sliced it in half and filled it with cream, the track was chocolate icing.
