Lately all of my cakes are taking a long time to bake and they tend to sink in the middle, (some more than others). Last night I baked an 8" that is only supposed to take about 35 minutes, but I had to leave it in for 55 minutes. The middle looked fine until about 5 minutes after I took it out of the oven. Any idea what could be causing this?

It sounds like your oven is not working properly. You can get an oven thermometer to see if your oven is working ok. Usually if your cakes sink from the middle, your temperature is too low.
I agree; oven temp is the first thing, then maybe too much moisture? Same recipe as always?
