I've been out of cake merchandising for about 2 years. I just had a request for a wedding cake in June and I need to figure out pricing b4 I meet with the girl tomorrow. I'm going off my old list for all the "extras" pricing but what should my per person price be for a basic buttercream cake? Do you include any decoration in the basic price? (basketweave, etc..) and fondant covered cake? Does the fondant cake include decorations? Any help is appreciated.

It depends on what your market will bear, and what you're willing to pay yourself...I start at $3.50 a serving for a nicely-decorated buttercream cake, but your market might be more or less. You might want to do a search for local bakeries and see if they've listed their pricing online. As long as you're not undercutting them (and yourself) you'll be fine. Just don't underestimate how long it will take for you to do the cake and end up undercharging.
