Need Help With A Sweet Table

Hi, just wondering if any of you out there could help me with idea for seting up a sweet table. I know technically how to do it and have done a handful, but I'm just kind of drawing a blank with what I'm using for this one. I have to get the bride a sketch of the set-up and everything I've drawn so far just doesn't seem to flow.

The bride got married in Jamaica so she wants 75 palm tree cookies, 80 small glasses with strawberry mousse blue sugar around the rim and a chocolate squiggle, 225 cupcakes, and 100 seashell chocolates scattered on the table (each in a little paper cup).

I have a cupcake stand that holds 75 cupcakes so the rest need to go on the tables. I have (2) 8'-0" tables and any platters or table clothes I need. Any boxes for height I'd have to bring myself. The cookies can't stand so they need to lay on a tray, but I'd like some height on the table and I'm concerned about putting the glasses (they are plastic) up on a platform. I'm not sure how sturdy they will be.

Any ideas? Any help would be greatly appreciated?
