I ordered some wafer paper thinking I was going to be able to use it in my new edible ink printer but it did not do well but that being said....I did taste the paper and to me there was not much of a taste to it and it dissolved fairly quickly in my mouth so yes, it is edible and doesn't taste bad.
If you have ever taken Holy Communion - expecially in a Catholic church - you probably have had wafer paper. I'm not talking about the tiny crackers many churches use these days 
As the other poster said, it basically just melts in your mouth w/o any taste.
