Is this something that I could use to make the animals for Noah's Ark?

I have never used it but would like to try.

Yes, you could. Modeling chocolate (a.k.a. candy clay or chocolate leather) is softer than fondant even when it's set up, so you may need internal supports, depending on the size of your animals. Use something edible for the internal supports if possible, like dry spaghetti sticks, just in case someone eats them. I just made some sock monkey figures out of modeling chocolate and they turned out well.

Working with the candy clay is just like working with the fondant, but yummier in case someone takes a bite. Good luck!
