I'm doing a cake tonight (for tomorrow) and they want at least 16 servings. It's supposed to be a motocross themed cake - I'm going to do a 9x13, and probably torte that (I'm not sure).

It's kind of hard to do a cake with that theme for such a small number of servings. Wilton's party servings says a 9x13 (two 2" layers) will serve 45! They don't need that much cake! Would only doing one layer cut the servings in half?

yes, a single layer will cut the servings in half. You should get approx 20-24 servings from an untorted 9*13.
