Please Help...cakes And Cupcakes Not Cooking Through

Good Morning,

You were all so helpful with my request for pumpkin cake recipes so I thought I would ask your opinions.

Last night I baked a batch of pumpkin mini-cakes (used the Wilton Mini Pumpkin pan) and baked the "cakes" at 325 (as instructed on the box) but baked longer for 45 minutes. The toothpick came out clean after the time, but I cut in one to make sure and at the bottom icon_cry.gif (the top of the pumpkin) it didn't seem to cook all the way through. Do I have to toss them, can I cook them again? Any suggestions on the next batch? I had the same problem using the large pumpkin bundt pan as well.

Some of these are gifts, so I want to make sure they are right so no one gets sick.

No, at this point you can't rebake them. I'd check your oven temp with an oven thermmeter. My suspicion is that it's not getting to the temp you're setting it to.
