Does Ganache Need To Be Refrigerated?

does chocolate ganache need to be refrigerated? I have a request for ganache filling for a fondant wedding cake, tasting in a few days, need some opinions asap

I asked the same question...I've been told no because the sugar in the chocolate preserves the ganache. I have made ganache several times without refrigeration and its been fine.

It is ok to stay unrefrigerated for a few days, but then it needs to go in the fridge (about a week I think) or even frozen (a month or two) for long term storage. It's hard to find the specific answer on this because the food-safety issue largely depends on how accurately the recipe was prepared. If your tasting is in a few days, you're fine if you made it today (Monday) or tomorrow (Tues.) If the tasting was next Monday I'd refrigerate it till Sunday night or Monday AM.
