I am making a 12x18 half-sheet carrot cake, but I only have 2 boxes of carrot cake mix. What is the best extender recipe to use with this? The recipe I am using is Carrot Cake with Raisins from this site, and I am afraid of altering it with sour cream or additional pudding mix. Any ideas? Has anyone done this before?

Certainly you can use my *original* WASC recipe for those box mixes. I have done it often and everyone loves the cake. I add about 1 cup grated fresh carrots to the batter & use pineapple (sleeved or jam) as the filling.
I make sure everyone know this recipe is more like cake than bread as some 'carrot cake' recipes are. You know, baked in a bread/loaf pan....
