Crab Roll Up's

package cream cheese softened
jar of seafood sauce
package of imitation crab( or real canned)
green onion
a dash of whorchestire sauce
tortillas



My best friend made this up,so again from memory. Mix all ingredients together and spread on tortillas and roll up,refridgerate and wrap in saran wrap. Much easier to slice into pinwheels when they are cold. I just go mix by taste,so not sure how much to add of everthing. I just start with the block of cream cheese and add!
I have also made the mixture the day ahead so the flavors and meld together.

culinarycreations----I just got home from a long day on the road and I could just hug you!!!!!!!!! Wow what a great thing you did getting this thread start. I probably couldn't have remembered where it was myself, but you managed to find it and get it going with a bang. I will post some of my favorites about 5 a.m. (my favorite computer time), and I can't wait to see what everyone else adds here.
Our Christmas tradition is a big brunch at noon and then everyone brings their favorite appetizers to snack on all through the afternoon. It's always a challenge to see who can bring the best "new" creation for that year.

I paid my annual visit to the Amish country in Wisc. today. If any of you live near an Amish community, the best place to buy all your baking supplies is one of the co-ops on their farms. Supplies are soooooo cheap and so fresh and nice and I always look forward to that trip. We also visit the cheese factory and buy all our cheeses for the holiday season. There is none better!!!!

Here is one that everyone always raves over and the plate gets scraped clean every time. It is just like a Jalapeno Popper, only in dip form.

It's a tad spicy, but goood if you're having drinks. icon_biggrin.gif It's best if you let it sit for a few minutes before serving.

Jalapeno Popper Dip

(2) 8 oz pkg cream cheese, softened
(1) cup mayo
(1) 4 oz. can diced or sliced jalapeno peppers, drained
(1) 4 oz. can diced green chiles, drained
(1) cup Parmesean cheese

Mix together the cream cheese and mayonnaise until well blended. Stir in chiles. Pour into greased pie plate and sprinkle with parmesean cheese. It's good if you sprinkle with bread crumbs, too. Bake at 350 for 20 minutes. Serve with baguette slices and tortilla chips.

Great ideas here are a few of my favorites:

Cream cheese at room temp, cover with cocktail, then top with salad shrimp (canned or frozen). Serve with crackers, yummy and super easy. You can even shape the cream cheese, like a tree for a Christmas party or other shape depending on the occasion.

For my meatballs I use bar-b-que sauce and peach preserves/jam, 1 bottle of each mixed together them throw it all in the crockpot.

I also use pre-made pie crust, cut into circles and baked in a mini muffin tin to make mini tart shells. Then fill with your favorite chicken or seafood salad. You can cut shapes from the left over pie dough with mini cookie cutters (stars, hearts, bells, Christmas trees), brush with egg wash, sprinkle with poppy seeds or sesame seeds and bake. Then put one of the shapes on each tart. They are super easy and look very elegant.

Chicken Chili Cheese Cups

4-6 chicken breasts
2 packets Hidden Valley Ranch buttermilk dressing mix
1/2 Chili packet seasoning
1 bunch chopped green onions
4-6 oz. grated monterey jack cheese
1 packet won ton wrappers
3/4 c. mayo
3/4 c. milk

Boil chicken with onion, garlic, salt and pepper. When cooked, cool and shred. Mix chicken with green onions, dressing mix, mayo and milk.

Push wontons into muffin tin and bake at 325 until crisp, about 7-10 mins.
Toss grated cheese with chili seasoning.

Once wontons are cooked, drop chicken mixture into cups and sprinkle with cheese. Broil until cheese is melted.




Fruit Dip

1 small can frozen orange juice
1- 12 oz. carton Cool Whip
1 small package regular vanilla pudding

Mix all ingredients together and serve with green grapes, strawberries, sliced apples, kiwi, fresh pineapple, etc.

Sweetcakes- I think that's the one! I get mine at the Deli @ Wal-Mart, I think it's a dollar. Really thick, and you can get it with different seasonings on top! thumbs_up.gif

Lily- You are so welcome!!! I love appetizers, they are my favorite foods!!!! My in-laws to be have get together with their families an it's always appetizers...uummm!!!
My sister actually lives in a town that has a huge Amish population. They have really neat stuff! There is one that all kinds of flours, like pumpernickel, I can't find things like that anywhere else! They also carry the sleeve fillings we all use in cakes.

Can't wait to see everyone's and try them!! I am trying some this weekend. We are having a girls trip to Longaberger Sunday, so I thought I might make a few to snack on while driving up.

Another variation on Crock pot Meatballs

6 lbs. frozen meatballs (from Sam's)
Can of whole cranberry sauce
Large bottle of barbeque sauce
Dump in a crock pot.

Variation on block of cream cheese and cocktail sauce use crab instead of shrimp.

Cheese Spread (Makes a lot)
1 lb. Velveeta cheese
3/4 cup evaporated Milk (1 small can)
1 small can drained pimento
1 1/3 cup salad dressing

Melt cheese and milk in double boiler. When hot and melted, add cut up pimentos. Remove from heat and add salad dressing. Cool and refrigerate. You can skip the pimentos and add garlic powder instead.

Oh you are all making my tummy growl. Two of our favorites are:

Cream cheese corn dip-
1 pack cream cheese
1 stick of butter
1 pinch of cumin
minced jalepenos
1 1lb bag of frozen corn

melt butter, cream cheese together on medium heat. Cook corn and add into mix. Add cumin and jalepenos to taste.
Use frito corn scoops to eat the dip! It is sooo good.

Our other favorite is Black bean & corn salsa dip
1 pack cream cheese
shredded taco cheese
black bean corn salsa

heat cream cheese and spread into pan
pour salsa over it, add shredded cheese on top. Heat until cheese is melted. Use corn chips or tortilla chips to dip with.

Can you tell we like comfort food? Cream cheese is so good warmed up!!

One of my favorites:

Artichoke Bruschetta
1 lg. can artichoke hearts, water packed, drained and chopped
1/4 cup parmesan cheese
1/3 cup red onion, finely chopped
1/2 cup mayonnaise
1 French baguette, cut in 1/3 inch slices.

1. Preheat the broiler
2. In a med. bowl, mix artichoke hearts, cheese, onion and mayo.
3. Top French baguette slices with equal amounts of the mixture. Arrange slices in a single layer on a baking sheet.
4. Broil 2 min. or until toppings are bubbly and lightly browned.

OMG... did you guys hear that?? That was my STOMACH!!! RUMBLING!!! Oh man, I LOOOOVE appetizers, I love every once in a while just having an appetizer party or dinner! YUM! I'm one of those people who just loves to have a bite of nine different things instead of a plate of one thing, you know?

Ok, I'll share!

Bagel/Cracker dip

1 c. mayonnaise
1 c. sour cream
1 8 oz pkg cream cheese (room temp works best)
1 envelope Knorr Vegetable soup mix
1 small sweet onion finely diced
1 small can water chesnuts finely diced
2 small envelopes Buddig Beef diced
1 T dry dill weed
Garlic powder to taste

Mix first three ingredients until smooth. Add all additional ingredients and stir to combine. Allow to sit for several hours or overnight for the soup mix veggies to soften. Serve with crackers or thin slices of bagel. Delish!

Cocktail Cheese Squares

2 loaves of day old sandwich white bread
1 Cup (2 sticks) margarine or butter
2 jars Old English cheese spread
1 T. Worcestershire sauce
1 dash of Tabasco sauce
1 dash of garlic if desired

Allow butter and cheese to come to room temperature. Whip to the consistency of whipped cream. Add seasonings. Stack 3 slices of bread and trim off crusts. Spread cheese mixture between each slice and on top. Quarter the stack and spread cheese on sides. Bake at 350 for 15-20 minutes. Amazing!!

Cool taco dip

1 can refried beans
1 c. sour cream
Taco seasoning to taste
1 c. shredded cheddar
1 c. shredded lettuce
½ c. chopped tomatoes
¼ c. chopped black olives

Directions: Soften beans in a microwave safe dish just until spreadable. Spread in bottom of serving dish. In mixing bowl combine sour cream and taco seasoning to desired level of spiciness. Spread over beans in serving dish. Sprinkle with cheese, and remaining vegetables. Serve with tortilla chips, cut tortillas, and/or crackers.

Mexican Cheesecake Dip  

2-8 oz cream cheese
2 c. shredded cheddar
1 c. sour cream
3 T. taco seasoning (heaping)
salt & pepper to taste
3 eggs
1 can chopped green chilies

Preheat Oven: 350°

Directions: Beat cream cheese until smooth. Mix in cheese, sour cream, and seasonings, scrape sides of bowl. Carefully mix in eggs one at a time just until combined, scraping bowl as necessary. Gently fold in chilies. Pour into greased 9â springform pan and bake approximately 50 minutes or until almost set in the middle. Place on serving platter and serve warm with tortilla chips. For variety, top with guacamole, salsa, sour cream, lettuce, chopped tomato, black olives, onions, peppers, shredded cheese, or any combination of those ingredients.

Here is one that is a little different but everyone loves. My mom always makes it at her Christmas party - good color.

Mexicalli Dip
1/4 cup onion diced fine
2 cloves garlic minced
1 lb cheddar cheese grated
1 12 oz can Mexicalli corn (I think it is Green Giant)
2 small cans tomatoe paste
1 tsp chili powder
1/2 tsp Worchestershire

Mix all together and heat in a fondue pot, crock pot or warming pot
Serve with tortilla chips


This from my MIL

Olive Cheese Ball
8 oz cream cheese softened
1 package of smoked beef or ham (the little tiny packages in the deli section) chopped
1 small jar (2 oz) pimento olives chopped
1 TBL minced onion
1 TBL mayonnaise
2 TBL Sherry
chopped nuts and parsley

Mix all ingredients together and roll in nuts mixed with a little parsley for color if you like. Serve with crackers or melba toasts

** I have used this cheese ball recipe in stuffed mini creme puffs

I am really bad at writing recipes down because I go by taste. But here is what I used and an idea of the ingredients:

Shrimp wontons a lo hispanic
1 Bag frozen cooked shrimp
(Approximate measurements)
2 Tablespoons Adobo
1 envelope sazon
1 1/2 Tablespoons Garlic Powder
a couple sprigs fresh cilantro finely chopped(or dry cilantro)
a pinch of onion powder
2 Tablespoons Soy sauce
1 or 2 Tablespoons worcestershire sauce
1 Tablespoons sesame oil
1 teaspoon balsamic vinegrette
Wonton wraps

I chopped up the shrimp after I thawed them, I made the marinade and let them sit in the marinade for about 5 minutes while I prepared the frying pan with corn oil and put my spices away. I spooned about 1 1/2 teaspoon of the filling into the wonton wrappers and fried them about 3 minutes on each side. Please taste it before you add the shrimp and adjust as necessary. I was having one of those good days and got lucky.

I tried them again and they were just as good, but I forgot to write the measurements down. I put a post it on the fridge so next time I remember to do so. My hubby made it using chicken and used meat pie dough. MMMMMMM!

Hubby compared them to P.F. Changs crab wontons and they weren't even crabthumbs_up.gif

My husband always asks me to make these. They're not "saucy", so they're really easy to serve with toothpicks and a napkin...

Sausage Balls

1 pound sausage
2 cups shredded Cheddar cheese
1 cups baking mix

Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, combine the sausage, cheese, and dry baking mix. Mix together, and shape mixture into walnut-sized balls. Place on a foil-lined cookie sheet.
Bake for 12 to 15 minutes. Serve hot.


And one of my favorites.... You MUST makse sure the bacon is crisp all the way through, because you want a nice crunchy (not soggy) bite. These didn't sound that great to me until I had them at a party. They are heaven on a cracker!

Bacon Crisps

1/2 cup freshly grated Parmesan
1 sleeve buttery rectangular crackers (recommended: Waverly Wafers)
1 pound sliced bacon cut in 1/2

Preheat the oven to 250 degrees F.

Place 1 teaspoon of the cheese on each cracker and wrap tightly with a strip of bacon. Place the wrapped crackers on a broiler rack on a baking sheet and put the baking sheets on the oven rack. Bake for 2 hours, or until the bacon is done. Do not turn. Drain on paper towels. Serve hot or at room temperature

This is so terrific. I just can't wait to try these great recipes. The gals at camp will be just thrilled with all of these new things. Here are the family favorites. I may do some seperate postings of these things.

WORLDS BEST TACO DIP

1 lb. hamburger, browned--add to it the following and heat well.
1/2 cup finely chopped green pepper
1/2 cup finely chopped onion
1 small can tomato paste
1 cup water
4 oz. cream cheese
1 envelope of Ortega Taco seasoning

Serve hot with Nacho Cheese Chips.

This can be made ahead and frozen. It's wonderful to have on hand for unexpected company. Just thaw and heat. This is just the best and is my hubby's favorite for the holidays.

SURPRISE CHEESE PUFFS

1 cup sharp cheddar cheese, shredded
1/4 cup butter or margarine
1/2 cup flour
1/2 tsp. paprika
1/4 tsp salt
24 small pimento stuffed olives, patted dry

Blend cheese and butter with fork or pastry blender. Add other ingredients, except olives, and mix well forming a nice dough. Divide dough into 24 pieces. Wrap each piece of dough around an olive and roll in your hands to form a ball. Bake or put on cookie sheet and freeze. Bake at 425 degrees for 15-20 minutes if frozen and 8-10 minutes if fresh.

Store frozen puffs in freezer bags. So nice to have on hand. If I am in a hurry, I just bake them as is. If I want them to look special, I make a cross of 2 shreds of cheese on the top. This looks nice when they are baked.

For weighing portions of this dough or cookie dough, I use an old, old weight watchers scale that has a little silver metal platform for a top. It is just invaluable to me when I do my holiday baking. I have tested it against my nice digital scale and it still weighs perfectly. You have to readjust it once in awhile, but that's not a big deal. I cut the main portion of dough into 2 equal portions first, and then I weigh the smaller pieces by 1 oz. portions. I end up with perfect sizes every time.

PROVOLONE-ROMANO ROUNDS

1/3 cup mayo
1/3 cup shredded provolone cheese
1/4 cup grated romano cheese
1 Tbs. snipped cilantro or parsley
20 small baquette slices

Stir together all except bread slices. Place bread slices on cookie sheet and broil just until lightly toasted. Turn over and spread cheese mixture on other side. Broil until bubbly 1 to 2 minutes. Serve hot.


OVEN CHEESE ROUNDS

1 cup mayo
1/2 cup thinly sliced green onions
1/3 cup (1-1/2 oz.) Asiago or parmesan cheese, shredded
1/4 cup chopped mushrooms
1/4 cup sundried tomato sprinkles or shreds
1--8 oz. container sour cream
Toasted or plain baquette rounds

Combine all except toast and spoon into 1 qt. casserole dish. Sprinkle with 1 Tbs. additional cheese. Bake at 350 for 30 minutes. Serve with toast rounds on the side. This is really good!!!!

This recipe is a little more involved but really very simple. It is from a very old Southern Living magazine and is really impressive and so tasty. Follow the ingredients closely for the best results. I am always tempted to add a little more chicken or a little more celery or whatever but it's best just the way it reads. I make the fillilng the day before and then roll them up the morning of the party. Cover and keep in the frig. and slice and bake just before people come for dinner. Hope you like it.

SAVORY CHICKEN BITES

1--8 oz. package of cream cheese
1/2 tsp. lemon juice
1/2 tsp. dried basil
1/4 tsp. onion salt
1/8 tsp. dried oregano
1/8 tsp. dried thyme
1 cup finely chopped, cooked chicken (have this in freezer done ahead)
1/3 cup finely chopped celery
1 Tbs. sundried tomato bits or pimeto or roasted red peppers finely chopped
2--8 oz. packages of original Pillsbury crescent rolls
1 large egg lightly beaten
1-1/2 teaspoons sesame seeds

Combine first 6 ingredients and mix until well blended. Stir in chicken, celery and red stuff!!!! Keep in frig until ready to use.
Seperate crescent dough into 8 rectangles and press perforations well to seal. Spread about 1/4 cup of filling mixture over each dough rectangle leaving a 1/2 inch margin on one long side and none on the other side. Roll dough jellyroll fashion starting at long side with filling spread out to edge. Pinch seam to seal. Brush with egg and sprinkle with sesame seeds. Cover with plastic wrap and keep in frig. until that evening. Don't do them ahead longer than the morning of the day you are going to use them.
Cut each roll into 5 pieces and place seam side down on greased or parchment lined cookies sheets. Bake at 375 for 12 to 15 minuts or until lightly browned. Makes 40 appetizers and people will rave!!!
I have cut this in 1/2 for smaller groups, so give it a try.



The other old standard that goes so well is this:

l --8 oz. package of cream cheese
1 can deviled ham
finely chopped pimento stuffed olives

Mix all together and serve with crackers.

This is my version of the 7-layer taco dip. This is probably the most requested dip for our parties. Easy and can be changed up for you liking.

Crab Layer Dip

1 (8 ounce) package softened cream cheese
1 (16 ounce) sour cream
1 jar seafood cocktail sauce
1 package imitation crab/or real
2 cups shredded cheese
green onion

Mix cream cheese,sour cream together,spread on bottom of serving dish. Then pour on top the seafood sauce,shred the crab on top and top with the shredded cheese and sprinkle chopped green onions over the top.
I tend to use scoopable nacho chips or whatever you like.
Green/red peppers and tomatoes can be added on top for more punch.

This recipe sounds a little odd, but trust me they are really good!


Cheesy Corn Bites

8 ounces cream cheese, at room temperature
1 cup shredded pepper jack cheese
1 large egg
1/2 cup frozen corn kernels
48 scoop-shaped tortilla chips (one 10-ounce bag)
Chopped chives or cilantro, for sprinkling

1. Preheat the oven to 350°. In a large bowl, mix the cream cheese, pepper jack cheese, egg and corn.
2. Arrange the chips on a large rimmed baking sheet and place 1 teaspoon corn mixture in each. Bake until the filling sets, about 20 minutes.
3. Sprinkle the corn bites with the chives; serve warm.

Okay, man I am pigging out!! I have a wedding tommorow and they ordered Italian Sasuage Stuffed Bead. Anyway, I had never made it before and oh...so good!!! icon_redface.gif

I took Italian Suasage an cooked it, add some Italian seasoning, little bit of Ragou and some Mozzeralla. I split a Garlic French Loaf and stuffed it....Very good!!!!! icon_lol.gif
