You don't need to refrigerate it. Coat it in shortening, wrap it tightly with plastic wrap. Then wrap it tightly again and put it into a ziploc bag. Press out all the air and then (if you can stand it) stick it in a plastic sealed container. Lasts for months if not a year in your cupboard.
