Try the barefoot contessa's recipe. I have tried it and it is wonderful. It has been so long since i have made it that I cant remember if it bakes up in domes. When you do bake it, set your oven to 400. I usually keep my oven at the temp and bake for 12 to 14 mintues.
I love "Barefoot Contessa" carrot cupcakes, it's the only recipe I use for carrot cake cupcakes.
I just made them recently and they did dome ever so slightly.
I think they are just too moist to get a real dome.

alright, thanks for all your help! i did the ina garten ones and they were delish! there were even a few left over for me! that cream cheese frosting recipe was TO DIE FOR! i put it in the fridge for about 30 minutes before piping and it looked great.
