A lady called me today wanting a 9x13 cheesecake decorated with fruit. What on earth do I charge for that??? TIA

minimum of 30.00 since that is a rather large cheesecake and will be difficult to do since most of the time you take them out of the pan.

I don't know about pricing, but I wanted to comment about getting it out of the pan.

I've started baking my cheesecakes in regular cake pans.

put a layer of parchment down on the bottom of the pan first, then add the crust and filling. bake. chill several hours or overnight. run a thin blade knife around the edge of the cheesecake, and then float he pan in a sink full of very hot water. invert the cheesecake out of the pan onto a covered cakeboard, peal the parchment off, and then invert once more so it's right side up onto a covered cakeboard or plate.

soooo much better than using a springform pan!!
