My best friends wedding is August 2nd. Since I am in the wedding AND making the cupcakes, I would like to bake them in advanced. I'm a teacher so I have the summer off... so decorating on the friday before is not a problem. Its about 130 cupcakes... and right now we are 12 days before the wedding. If I bake and freeze them, do you think I could start this week? I've frozen all my cakes before but never cupcakes.

Yes, you can freeze cupcakes without frosting no problem. Just make sure you put them in the freezer as soon as they have cooled in an airtight container. If you layer them put non-stick baking paper between them. I did it this way for my son's bday in March and they came out fine.

I've also frozen cupcakes (unfrosted). I wrapped each one in a layer or two of saran wrap. I thawed them, still wrapped, in the fridge. On the day I wanted to decorate them, I took them out of the fridge, unwrapped, let them warm up a bit and get rid of any condensation. No problems.
