Dh White Mixes Won't Raise

Duncan Hines white cake mixes with the date of Apr 22 09 and Apr 23 09 will not raise properly. Watch dates when you purchase them.

We had that same problem with them about this time last year and they a cornbread like texture. We contacted DH and they just said that we probably weren't following the directions right and sent us about 10 coupons for a free mix. (The owner of the Cakery I work at has been baking for 30+ years, I think she has it down!) Once we got out of that batch, it was fine.

Yikes! All but one of my boxes is dated April 22nd! Thanks for the heads-up. I'm going to experiment with what I have.

DH says they don't recommend mixing more than 2 at a time. I've been mixing more than that just fine until I hit the APR mixes.
Too bad they can't admit when they screw up.

Definitely not enough baking powder. The outer edge raises slightly and the center sinks. Even cupcakes came out flat.
