I have been asked to make a cake for late August in Nothern CA...temp usually around 100-107. Outdoor wedding in the late afternoon/early evening. What is the best frosting & filling to use?

I live in Texas and we also get really hot weather where I live. Last year I did a outside wedding in July and I turned out fine. I use the all shortening recipe and added a few tsp of meringue powder to the frosting to help. As long as you stay away from real butter it should be ok. I just use the bc for the filling. I think you can use those premade fillings that come in the sleave also.
