I have a wedding coming up in July and it has cream cheese filling and I will need to refrigerate it. I have heard that you are not supposed to refrigerate fondant though. So with Choco-Pan being a chocolate fondant can that be refrigerated? I do not want it to sweat on the way to the wedding.

Even with cream cheese filling, if the room is cool you shouldn't have any problems with spoiling. The sugar in the filling acts as a preservative.

The sweating factor will depend on the humidity level of your area as well as the heat. You could try putting a small amount of fondant in the fridge and then setting it out to see how it reacts.

I have to say.... I retire all of my chocopan products at the start of summer ... icon_sad.gif (I LOVE the stuff to, have tons of it) but it is sooo hard to work with once the temp reaches a certain point.

I was going to ask more about Choco Pan or go on the web to find it. Since I'm in Arizona, probably not a good idea! icon_cool.gif
