I am looking for a frosting recipe that is not sweet and heavy like buttercream but is different than bettercreme. The frosting I had tasted on a cake recently was white and was like silk. It was soft and not very sweet. I heard that it was made with egg whites and granulated sugar. Would someone be able to help me?

Also, could you use Meringue Powder instead of egg whites? I'm worried about the hot weather. If one did use egg whites, would the cake need to be refrigerated?

I would be VERY grateful for any thoughts or recipes!

God Bless,

Deb

Here's an overview of the basic frostings by type:

(Has handy frosting troubleshooting chart on last page.)

The frosting you like might be 7-minute frosting:

Yes, you can reconstitute the meringue powder (according to package directions) and use that in your frosting recipes.
