Can anyone tell me how long I can leave a FBCT in the freezer? I had a lady that wanted a cake for a friends birthday. Well, I found out today that this friends grandmother is on her death bed so needless to say the party has been postponed. I made the transfer Sat. evening and now the cake will not be needed until next Monday. Will it be ok in the freezer for a week?

Yes, I have left them in the freezer a week.

Just make sure, now that it is frozen, that it is in a sealed container/bag so it doesn't pick up any freezer odors (assuming this is your home freezer).

Thanks for the info! I have it wrapped in plastic wrap and foil. Hopefully it will taste alright. I really don't want to go thru all that work again, but if I have too.... icon_wink.gif

Is it in a deep freeze, or in your freezer with your refridgerator. Most refridgerator/freezers are self defrosting that can wreck havoc on things sometimes. I always use my deep freeze(chest freezer) for things like that.
