Hi! I am making a cake today that is not going to be eaten until Saturday. I found a recipe for icing that uses only 2 Tbsp of milk. I will not be able to refrigerate it since it is being covered in fondant. Will the icing go bad sitting out a couple of days? Do you think I should substitute the milk for water? TIA!

You can sub the milk for water but you really don't have to. The sugar content acts as a preservative. 2 Tbs of milk in proportion to a whole pile of sugar is not likely to spoil any time soon. I use butter and milk in my icing and I've kept it unrefrigerated for at least a week.
