I want to make a bettercream/ pudding filling. How much milk should I add to a 4 serving packet of Jello instant pudding before adding it to the bettercream? And how much bettercream? I know Melvira posted this at some point but it is so hard to go back through the previous posts!
I want to make chocolate cuppies with chocolate caramel chip filling with dulce de leche bettercream on top. Thanks!

Yes, here is what I do...

8 oz cream cheese
1/2 c. sugar
1 (4 serv) pkg any flavor pudding
1/4 c milk (just to moisten)
2 c. liquid bettercreme

Whip cheese and sugar until smooth. (Can use PS if you prefer). Add pudding and milk, whip until smooth. Set aside. Whip bettercreme to almost stiff peaks. Fold into pudding mixture.

This makes a fantastic filling and frosting, just be sure not to underwhip the bettercreme or it will not hold up.

Another amazing option without cream cheese is to pour the package of pudding into the liquid bettercreme (skip the sugar) and add about 1/2 c. milk, whip it all together to almost stiff peaks. This is a fantastic mousse/filling/icing!

I had made 3 different types of cupcakes on thursday evening, and sent them with my mom to work on friday. 1st her crew thought she bought them, and didnt believe I made them, then her boss came over and stole half of them after he shoved 3 in his mouth, and took them to the other area managers. Now they are wanting to pay me to make them some for a big Mgrs meeting Aug 12th! I get to pick whatever!!

So...does anyone have any suggestions? I need something that can be left out. I was thinking 1 chocolate, but after that no clue!

That is AWESOME about the cupcake order! I think a chocolate would be great. I always like fruity things. A lot of people here (including myself) have gotten rave reviews for the limeade ones with either cherry or raspberry frosting. Yum! Good luck!

Chassidy- that is so cool! You will be famous in Boca in no time!
Choc is always good.
I have found that Banana is really surprisingly popular. (No surprise to me but my DH doesn't like them, but almost all the other guys I know snatch them up quick)
White/Raspberry is a good classic also. Can be easily made to be kept out.

I think pick out your best vanilla and chocolate recipes for two of them and I agree something fruity. The raspberry lemonade with lemonade frosting go over good for me. The Coconut Key Lime would be good. If you can fill them better yet!

I think for chocolate, I am going to do chocolate pb cups, topped with Ganache.

Vanilla, I dont usually make, so could I take a french vanilla box mix & add a vanilla pudding?

The other...........I kinda like the fruity one, since it's so hot here.

Good going Chassidyg! What flavors did you make this time out that they loved so much?

I would do a chocolate, vanilla with fruit filling & complimentary topping, and a lemon, lime or pineapple/coconut combo.

Vanilla sounds plain but it's always a winner. I love vanilla myself. You might want to try some of the scratch recipes. I know when I made the Golden Vegan Vanilla cupcakes and took them to the Salon I got great comments. I filled with vanilla bettercreme and used the Decorator's Cream Cheese Frosting on them. Some of them said they have been looking for a great scratch cake taste for a long time and just haven't been able to find one around here. One girl said that was the best cupcake she's ever had!

You really make me hungery with your vanilla and raspberry! When you make the rasberry filling do you use the liquid Bettercreme recipe for that to or just the sleeve filling?

That Cake I just posted had Red raspberry (sleeves) filling mixed with my buttercream dream icing! Because thats what my customer wanted! But I have mixed that same filling with the bettercreme and its real good ! Thanks for all the comments that have been left on my photos !Linliv46...My main fruit fillings are mostly fruit and just a little icing mixed in.Pm me if I have not answered your question !
