I make what I call a "Mexican chocolate cake" that is a dark chocolate cake with instant espresso powder, cinnamon and cayenne pepper added. It is WONDERFUL.

Do what you do for your best chocolate cake mix (darker chocolate is better), and add cinnamon and cayenne a little at a time, tasting the batter until it tastes good to you. If I had to guess, I probably add about 2-3 teaspoons of cinnamon and 1/2 to 3/4 teaspoons of cayenne per standard cake recipe.

Mix about a Tablespoon of the instant espresso powder in with the liquid that is going to go in the cake to disolve it (water, milk, even in a beaten egg).
