100% Ice Cream Cake

I have a wheat intollerance, so most of my cakes are either gluten free or I do without.

This year, for my son's birthday, I want to make him an ice cream cake that is 100% ice cream. However, I wanted to try to make it in one of the Wilton Character Pans. Has anyone does this and is there any 'tricks' or things I need to know before I do this.

I was looking at doing Mickey Mouse with Vanilla Ice Cream and then decorate it with Fudge and some type of 'frosting' but I'm not sure what type of 'frosting' to use.

Any idea/helpfull hints/suggestions are ALWAYS deeply appreciated.

Here is a tutorial on how to make an all ice cream castle cake. I'm sure it would work the same way with any mole.
