I'm not sure how to explain this but here goes...this past weekend made a mickey mouse for a b-day. Used the Luscious Lemon Raspberry recipe from the site. Why did the cake, which was completely cooked through, when sliced a the very bottom look like a block of custard or cheese like? Can anyone give me advice as to what I did wrong. I've used this recipe before and it's worked but this time.....

did you put it on the cake board when it was still warm???? If you put it on a board while it's still warm or wrap it up when it's still warm you will get condensation that will gather and make one side of the cake gummy...usually the side that's down.
