I have decided recently to move on from box cake mixes to making my cakes from scratch. I have found fabulous vanilla, chocolate, cherry chip, banana, and lemon recipes but have yet to find a carrot cake recipe that will actually BAKE! Every time I try to make a scratch carrot cake the edges and top get overbaked and chewy and the middle is raw. Also, it never rises, always sinks in the center. HELP!! I really want to be able to make all my cakes from scratch. So, anyone with a no-fail carrot cake recipe out there that can help me, I would be forever grateful!

I use this one and never have an issue.....I also add chopped pecans instead of any walnuts. Don't care for the bitter walnut taste. Anyway, I brush the cake after it cools with a vanilla simple syrup and frost with IMBC w/cream cheese added - everyone raves.

Thanks, ironbaker! Yes, that is Denny (Jeffrey Dean Morgan)! He is my new favorite hunk! I fell in love with him on Grey's and recently saw him in "P.S. I Love You" which was an awesome movie and now I like him even more! Plus, he is really easy on the eyes...lol!
