During the holidays, I had to use bright red fondant and bright green fondant a lot! I used ameriacolor gels to dye them and they turned out great in color, but the fondant was very soft. I added more sugar to them, but it still was very difficult to work with.

Is there a particular type of dye that you guys use to tint your fondant so ti doesn't soften it so much? Should I look for a paste? (the only paste I have seen is Yeck, Wilton..Does Americcolor make a paste? Or is there a powder I should use?

Thanks!!!

Americolor is the best, but it will take more sugar and some cornstarch to absorb the extra liquid.

The only other viable alternative is to buy it already colored.

Thanks for your help. Primary colors are great already colored, and sometimes I don't have time to order it. I have also noticed sometimes the pre-dyed fondants are soft. (Satin Ice, etc. I won't put Wilton Fondant on any of my cakes. Yeck!)

A tip Nicholas Lodge offered that works well for me. Tint a piece of fondant about the size of a marble in several shades darker than you want the finished color to be. Knead that ball into the amount of white fondant you will need to cover your cake. You can marblize the fondant by doing the same thing, just knead in the colored ball and then pull the fondant from both ends, twist and pull again until you get the marbled effect you like. Then roll out the fondant and cover your cake.
