Since this is the original change a letter and you can only change 1 letter.. 2 times someone changed at least 2 letters.. the last one I noticed was from greeting to creating that is 2???

This is the way it was done originally by Lisa:
This is the way we started out:

"I'll post a word and the next person takes the word and changes a letter. One letter only. You can add a letter, take away a letter or change a letter but only one and you can switch the letters around to make new words. You can't go back and forth between the same words though."

Over a long period of time the game has evolved into where we can change up to two letters, and either drop or add one letter each turn.

We've been playing change up to two letters and add or drop one letter for weeks now, don't know why you are so confused.
