What are the benefits to buying the Magic Line pans? Are cakes supposed to release more easily from them? And bake more evenly without doing anything special?
I bought a 16" square Magic Line pan to make a cake for last weekend. I really liked the straight sides on it (although the cake I made didn't really need the straight sides). I put two flower nails in it and I also used homemade cake release. It baked very evenly and came out of the pan so easily. But I'm just wondering if I needed to do that with these pans or was it overkill?

I do like this pan better that the wilton ones I have. I bought it at a small specialty shop. It was $10 more than the same sized Wilton (16 x 16). So now I'll look around my area and see if thats about the right price.
I did find that this pan JUST fit into my oven! Any larger and the door would not have shut! I never even thought about the oven size when I bought it - I was thinking of the board that I put the cakes on - which is 24" x 24" (hubby cut it for me out of something he found at Home Depot). I almost bought the 20 x 20" pan. Darn good thing I didn't!! Besides - we had way more than enough cake - which is fine with me. I would hate to run out at the party!!
Good question. I will be looking around at the prices and probably make decisions based on the pan in question. If it's a pan I think I will use alot - then I'd be more willing to spend the extra money.
I know Wilton is cheaper - but I've never had a cake bake so evenly as I did with the ML pan. I use the flower nails in my Wilton pans too and it just doesn't bake as nicely. So I am willing to pay a little more to save myself some headaches! Plus, the pans you invest in once and use so many times.
