Cake Balls -- Thanks And Quickie Question

Thank you to the tips and help I got here concerning cake ball consistency. The 2nd batch I made was perfect and a hit!

One question though -- I put them in the freezer after coating them, as it said to do in the tutorial, but they sweated afterwards. THe tutorial said they would, but it was more extreme than I thought it would be. Some were a bit sticky looking, but still tasted great.

My question is this: is it okay to just put them in the fridge after coating them? Does freezing them after coating them help to make that really rich consistency?

I don't freeze mine after dipping but I do refrigerate them and they are fine.

I'll have to look at the recipe but I remember it saying to put them in the freezer for 30-90 minutes BEFORE you dip them in the chocolate. Then after coated you just let the chocolate set.

Another option after freezing for about an hour is to put them on a cookie sheet and bake them at 300 for 10 minutes, being careful not to burn. Then coat in chocolate and let that set. They should be fine after that at room temp.

I got the idea for freezing them after coating them from the tutorial here, but I don't think I'm going to do that again because they sweated and the chocolate wasn't as nice looking as it had been origianlly.

No, no, no, no, no!! You don't freeze after they've been coated in chocolate, or else they will sweat!!! You roll them into little balls then freeze those. After that you coat them in chocolate and let dry at room temp. You'll never have another sweating problem again! icon_smile.gif
